Comment: Delicious moist, yet light lemon sponge cake. Uses an 18cm tin and the all in one method. Used 3 medium eggs instead of 2 extra large eggs and skewered the top a little to let the juice soak in a little. Cooked it at 170 degrees - fan oven for between 30-35 mins.

115. Key Lime Pie (L Faulkner)

Comment: I've never actually tasted a key lime pie before but have always thought it sounded good (don't like to take risks in restaurants when it comes to dessert!). This was easy to create and tasty. Light but sweet with a good crunchy digestive base.
Use it again: Yes.
Other nice recipes from this book: Toria's crispy marinated chicken, victoria's lasagne, scones, creme brulee, roast lamb.

114.Pear tarte tatin (L Pascale)

Comment: This was my first attempt at a tarte tatin which got off to a bad start as I managed to burn the butter and sugar mix due to leaving it on the heat too long. Made a second attempt at heating it from scratch and added the pears and all grand. It tasted lovely in the end. (Used shop bought puff pastry).
Use it again: Yes, probably.
Lovely recipes from this book: Fudge brownies, classic victoria sponge, pavlova, Chocolate cake, Chocolate melting pots, Soda bread, Strawberry and mascarpone swiss roll, baked plaice with rosemary and anchovies, mini toad-in-the-hole, Focaccia, glam mac and cheese, mini dark chocolate and raspberry swirl cheesecakes, lemon tart.
Avoid: Banana and Honey Souffle, ginger and mascarpone creme brulee.

Comment: I really wasn't certain how this was going to work out - uses cream to bring together honey and dijon mustard. it was tasty enough and very fast to prep and cook.
