134. Carrot Cake

Comment: This was pretty good. Made some minor modifications - it's supposed to be a carrot and cardamom cake with cinnamon cream cheese frosting - but left out the cardamom, using 2 tsp of cinnamon in place of 1, omitted the cinnamon from the icing (also used 50g less icing sugar and could probably have gotten away with even less) and added a bit of vanilla extract. It was a moist and tasty cake. (Also used 20 cm tins instead of 23cm).
Use again? Possibly.

Comment: A basic chicken tray bake that was surprisingly tasty. Used chicken breasts rather than thighs and removed them for the last 5-10 minutes (should really have added them later).
Use again? Probably not.

132.Chocolate Profiteroles (M Berry)

Comment: I wanted to try the Mary B version of profiteroles after watching the Great British Bake off bakers make the religieuses recently. Decided to stick with one size profiteroles rather than the 2 separate and used whipped cream filling rather than creme patisserie. I followed the recipe, and Mary's instructions once again produced a great result! I got 11 instead of 12, and they were rather large.
This is from one of my must-have books which I turn to for traditional recipes.
Use it again: Yes. The last  profiterole recipe I used didn't work out so well so I will definitely use this again :-)

Comment: Lovely burgers - nothing too special but very tasty. Used onion in place of spring onion in the mix and cooked in a heavy pan.

Comment: This should have been lovely but it was very salty - not sure why but possibly came from the rashers. Used chicken breast on the bone rather than chicken legs. The chicken was lovely - didn't dry out and the sauce worked well. However, the saltiness ruined it a little. Will definitely try this again and use different type of rashers.

Comment: These were OK but a little too healthy, even as breakfast muffins. They could do with more banana in the mix, so if making them again (which I probably won't) would use 3 large bananas mashed in the mix and a sliced extra one for the centres.

Comment: This was fine. However, it was very sweet, and the quantities seemed a little wrong.  Checked it against recipe I've used a few times, and number of eggs in this one does not seem correct - for the same amounts of sugar and chocolate (both 175g), this recipe uses 4 eggs, while other one uses 6 eggs. I'm sure you could get away with 5, but 4 just isn't enough. Method also slightly different to normal - cover with foil rather than with a damp tea towel. (added some raspberries).
Use it again: No.

123. Fish baked with potatoes (R Allen)

Comment: This surprised me - I'm not a huge fan of fish like cod,hake or haddock, but this made hake taste delicious. Diced potatoes and red onion with oil, roasted, and then the fish laid on top for the last 12-18 minutes. Added some cajun seasoning to the potatoes/onions for an extra bite - worked perfectly.
Use again? Yes.

Comment: Yummy - great for using up soft bananas. Lovely sweet teacake. Uses a bit of honey and maple syrup. It needed 10 minutes longer in the oven than the recipe stated, but otherwise worked out well.

Comment: A good rich winter tea cake. Easy to make and tasted lovely, especially warmed up.
It needed 10 minutes less than suggested at temp of 170. The book could have done with a photo as no idea of what it should look like!

Comment: 3 of these worked (out of 12).The rest lost all volume.I think I took them out too early and made them too big. The mix should have made 20. These still tasted good anyway!

Comment: Very good. Didn't take too long to cook and tasted delicious. Added a bit more spice than suggested and it was just right. Left out the fennel and coriander seeds. Great with rice or naan bread. (photo doesn't make it look that appealing but it really was tasty).

Comment: These followed a strange cooking method I think. Decided to give them a try anyway just to see. They were grand - but more like marshmallows with a thin crisp outer shell. They only went in the oven for about 45 mins at 120 fan oven - so good for a quick set of meringues. Think I'll stick to longer oven time methods.

116. Crunchy top lemon cake (M Berry)

Comment: Delicious moist, yet light lemon sponge cake. Uses an 18cm tin and the all in one method. Used 3 medium eggs instead of 2 extra large eggs and skewered the top a little to let the juice soak in a little. Cooked it at 170 degrees - fan oven for between 30-35 mins.

Comment: I've never actually tasted a key lime pie before but have always thought it sounded good (don't like to take risks in restaurants when it comes to dessert!). This was easy to create and tasty. Light but sweet with a good crunchy digestive base.

114.Pear tarte tatin (L Pascale)

Comment: This was my first attempt at a tarte tatin which got off to a bad start as I managed to burn the butter and sugar mix due to leaving it on the heat too long. Made a second attempt at heating it from scratch and added the pears and all grand. It tasted lovely in the end. (Used shop bought puff pastry).
Use it again: Yes, probably.
