116. Crunchy top lemon cake (M Berry)

Comment: Delicious moist, yet light lemon sponge cake. Uses an 18cm tin and the all in one method. Used 3 medium eggs instead of 2 extra large eggs and skewered the top a little to let the juice soak in a little. Cooked it at 170 degrees - fan oven for between 30-35 mins.

Comment: Nice enough light chocolate cake. The icing to go with this is margarine so used a chocolate (using real chocolate) buttercream icing and higher quantities to include a covering on the top.
Use it again: Yes, for a light choc cake.

Comment: Yummy light, quick and easy lemon tray bake with a subtle taste of lemon in the sponge part and zesty icing. Very simple all-in-one method. Cooked it at 170 degrees - fan oven for just under 30 mins.

Comment: Lovely simple subtle tasting coffee cake. I used a different recipe for the icing as the quantities seemed a little off but the sponge part was perfect. This will definitely be used again! The tasted even better the second time I made it - I forgot to take a photo but will ensure I do next time.
